
Specifically (according to the markings on the bottle), the corn used here is Food Grade #1 White corn from a farm in South Texas. ProductĪll whiskey starts its life as a mixture of grains and, as a bourbon, a minimum of 51% of that content needs to be corn here. Garrison Brothers regularly holds volunteer bottling events where members of the public can apply to be a bottler for the day, helping the distillery to package their product for sale while “quality control” sampling some of the spirit themselves. Since their first batch was released on March 2nd of 2010 (Texas Independence Day), the distillery has continued to grow and the Texas-produced bourbon can now be found in most states in the US. The distillery remains family owned and operated with Dan Garrison at the helm and his parents, spouse, and children all working in some capacity for the facility.

On the finish, cocoa stays on the tongue.In 2006, founder Dan Garrison found himself wanting to do something besides software marketing (probably one of the most stereotypical Austin, Texas professions) and was granted the first distillery permit for production of bourbon in the state of Texas. Overall, it is reminiscent of smoked barbecue with heaps of barbecue sauce. The bourbon just tastes like ribs or a brisket rubbed down in pepper, cinnamon, and molasses. Smoking chips like Applewood or mesquite come out. Palate: For starters, it does not drink like a cask strength whiskey.

At the end, graham cracker and Cinnamon Toast Crunch linger in the nostrils.

The scent of cinnamon scented pine cones mixed with brush fire is abundant. On the fruit side, I pick up on cherry compote with orange peel and orange segments. It has so many qualities to it ranging from fruity to smoky. Nose: At the beginning, there is a tiny tinge of sour mash. Only 6,440 bottles produced, so the whiskey is limited. The small amount that is leftover blends to create their most popular whiskey. Due to the extreme heat, the bourbon inside these barrels evaporates so much. These are what Donnis Todd calls his favourite top-shelf barrels. Instead, he searched for a cooperage willing to make custom barrels with thick staves that could withstand the brutal temperatures.ġ00 “piggy banks” make up the 2020 Garrison Brothers Cowboy Bourbon. However, this did not defeat founder Dan Garrison.

Housing traditional barrels full of liquid gold proved difficult at first. The summers in Texas can reach up to 130 degrees in the scorching sun. Each is hand numbered by Master Distiller, Donnis Todd once it is gone, it is gone. It is completely uncut and also unfiltered to give the biggest flavor possible.

This year’s batch came out at 133.9 proof, so just a bit lower proof than last year’s release. For a good number of years now they’ve come out with their limited and very high proof Cowboy Bourbon. However, Garrison Brothers was the first legal whiskey distillery of its generation in Texas.
